Crafting bread the slow way on San Francisco's Stockton Street.

Our Story

A bakery built on
patience and flour

Fancy Wheat Field Bakery began as a quiet conviction: that bread should take as long as it takes. In a city that never stops moving, we chose to slow down — letting our sourdough cultures ferment overnight, hand-folding dough until it finds its own rhythm, and baking in small batches so every loaf carries the same care.

Nestled on Stockton Street in the heart of San Francisco's North Beach, our bakery has been a neighborhood fixture for decades. The regulars know us by name. The newcomers discover us by scent — that unmistakable whisper of toasted wheat and caramelized crust that drifts down the block every morning at dawn.

We source stone-milled flour from California mills, cultivate our own sourdough starter passed down through generations, and bake everything from scratch before sunrise. What you taste is simply time, done right.

The Craft

What happens when you
refuse to cut corners

01

Source

Stone-milled flour from California mills. Local dairy, eggs from free-range farms, seasonal fruit from Northern California orchards.

02

Ferment

Our sourdough cultures age for 24 to 72 hours. Cold retardation develops complex flavors no shortcut can replicate.

03

Shape

Every loaf, croissant, and scroll is shaped by hand. No molds, no machines — just skilled hands and years of practice.

04

Bake

Deck ovens at precise temperatures. Steam injection for crust. Baked in small batches so nothing leaves the kitchen rushed.
